Chicken dum biryani





This recipe is dedicated to all our die hard chicken Biryani lovers, this hydrabadi style recipe is a must for this festive season๐ŸŽ†๐ŸŽ†๐ŸŽ†๐ŸŽ† do try this at home and treat your loved ones, an authentic biryani is always slow cooked on dum (low flame). This recipe is passed by our mughal ancestors from the nizam region (Hydrabad) this is the  reason, its famously known as Hyderabadi dum biryani.




Ingredients for chicken gravy

1/4 kg boneless chicken(parboiled)
2 tomato puree
1 cup curd(also include salt, chilly powder, blacksalt, daniya powder & garam masala powder) and make jhol
*Mix jhol and chicken properly and let it rest for 1 hour.
2 onion finely chopped
Handful of mint leaves
Handful of corriander leaves
1 tsp ghee
1 tsp oil
1 tsp gingergarlic paste

Ingredients for biryani rice
1/2 kg Basmati rice(soaked)
1 bay leaf
2-3 cloves
2 elachi
1/2 tsp jeera
1 tsp oil
Salt as per taste
Water double the quantity of rice

Take a handi, add oil and while garam masala items let it splur add rice, salt &  water.
*cook rice till 60- 70% done and strain excess water.

To prepare chicken gravy

Take 1 tsp of oil & ghee, saute onion till golden brown, add gingergarlic paste & tomato puree cook till oil oozes out.
Add the marinated chicken, check the seasoning add if required.
Cook this mixture on sim flame for 15 minutes.
Take a big handi, spread one bed of chicken gravy, and spread rice also, repeat this process for two more layers.
Finally sprinkle 2 tsp of saffron infused milk, handful of mint & corriander leaves.

Cover the lid properly, place heavy vessel to assure steam doesn't escape.
Let it cook for 15 minutes in low flame.

Now switch off the flame and let it rest for 10 minutes and enjoy.....

Mayonnaise

Mayonnaise




Mayonnaise adds a fun & tasty element to our sandwiches, burger and many more recipes. This mayonnaise recipe is easy to make &  can be used any time.

Recipe
1 egg
1 cup oil
Pinch of pepper
Dash of lime juice
1/2 tsp of Italian seasoning
1/2 tsp salt

Method
Take all ingredients in a bowl and beat it well with hand blender till thick.

Summers are ringing in make sure you treat your little ones with this delicious and nutritious shake, so that they get enough energy for their summer classes.

Ingredients

1 banana
500 ml milk(chilled)
2  pods of elachi
5 cashews
5 almonds
2 tsp of sugar or honey

Method

Take all ingredients in a blender and beat well.

 ๐ŸŒนShivratri is a very popular festival celebrated all over India
๐ŸŒปThandai is loved by lord Shiva is also offered to him on this special day
๐Ÿ’ So here's the recipe of thandai. Do try it for sure.

Ingredients
1 ltr of milk
Few strands of kesar
Sugar as per taste
1-2 drops of rose essence

Thandai powder recipe
3 elachi pods
12 almonds soaked overnight
Dry roasted poppy seeds(khus khus)
1 tsp fennel seeds (sauf)
1 tsp of Kali mirchi(pepper powder)
Grind all ingredients into powder

Method
๐Ÿ‘‰ Take a pan and let the milk boil, add sugar.
๐Ÿ‘‰ Add the thandai powder & sugar. Make sure you stir properly.
๐Ÿ‘‰ Add saffron strands & rose essence.
๐Ÿ‘‰ Let it boil for few minutes, strain & let it cool down. Serve chill !!!

Ingredients
1 capsicum cut into cubes
1 clove garlic
4 spring onions
1 handful of spinach(palak)
1/2 inch ginger
1 green chilly
These ingredients will be added in pressure cooker.

Other ingredients
Salt as required
Pepper as per taste
1 tsp butter
1 tsp maida
1/2 cup milk
1 stalk of leeks ( or celery)

Method

๐Ÿ‘‰ In a pressure cooker, add 1 tsp oil, add capsicum, garlic saute till capsicum sweats add rest of the other ingredients mentioned in pressure cooker category, saute for a minute.

๐Ÿ‘‰ add 2 cups of water and cook for one whistle, allow it to cool down, grind to puree and strain the stock.

๐Ÿ‘‰ In a pan, add 1 tsp maida & butter saute till frothy, add the puree, pour the stock to adjust the consistency, let it boil for few minutes.

๐Ÿ‘‰ Add milk, salt & pepper. Keep stirring.

๐Ÿ‘‰Add leeks stalk, you can add celery if leeks not available.

๐Ÿ‘‰ While serving sprinkle dash of lime.

Note:- strain puree as well.
            If leek not available you can                   substitute with celery.

Chicken tikka masala

Chicken tikka masala



A treat to all  the chicken lovers, yummy drooling chicken tikka curry is a perfect combination for special occasions. Served with butter naan or any Indian bread.

Ingredients for marination

150  gms of boneless chicken (parboiled)
1.5 tsp of ginger garlic paste
1  cup of curd
1 cube of cheese
Salt as per taste
1 tsp mirchi powder
3/4 tsp of tandoori masala powder
1/4 tsp of black salt
1/4 tsp of pepper
Dash of lime
Handful of coriander leaves

Mix all ingredients in a bowl & keep in fridge for 1/2 hr.

Other ingredients
2 tsp of ghee
1 tsp of oil
1/2 capsicum cut into cubes
2 onion sauted in oil til brown & blend into paste.
1 tomato pureed
1 elachi
1/2 inch of dalchini
Cream to garnish
Salt as required

Method
๐Ÿ‘‰ Take oil in a nonstick kadai, transfer the marination in it. Let it cook in sim flame for 15 minutes. Keep stirring occasionally.
๐Ÿ‘‰ Take a kadai, add ghee, elachi, dalchini, onion paste, capsicum cubes & tomato puree saute for few minutes, transfer the cooked chicken in this mixture add salt as required & check the other seasonings as well.
๐Ÿ‘‰ Let it cook for few minutes, transfer in a bowl garnish with cream & coriander leaves.
